Roasted D’Anjou Pears with Maple Yogurt & Hazlenuts

Created for the Peninsula Wellness Center membership drive on Saturday, Dec 4, 2010.

Serves 6

3 D’Anjou pears, peeled and cored
1 T. Canola Oil
1 cinnamon stick
½ C. Apple juice
2 C. Fage Yogurt or other Greek Yogurt
4 T. Maple Syrup
½ C. Hazelnuts, Toasted Peeled and Cracked

 

  1. In a large Non Stick sauté pan heat the oil and add the cinnamon stick to begin to flavor the oil. Add the pears and allow to caramelize lightly on each side, approximately   four minutes. Add the Apple Juice, cover and reduce heat a llowing the pears to cook and soften, 6 minutes.
  2. In a medium bowl combine yogurt, maple syrup and mix well. This will cause the yorurt to thicken slightly. Refrigerate mixture till ready to serve.  
  3. Allow pears to cool and reserve any syrup in the pan to drizzle over the top at time of service. Once pears are cooled, serve by spooning the yogurt on a plate or bowl and place roasted pears atop. Sprinkle with the cracked hazelnuts and serve. Drizzle any excess syrup that was reserved and enjoy.
